BEER CHEESE DIP

A combination of your favorite beer and cheese, Creamline's Beer Cheese Dip is the perfect appetizer for any fall celebration. This rich and creamy dip is delicious slathered on crisp apples, spicy sausage, or our favorite - soft, doughy pretzels.

BEER CHEESE DIP

Ingredients:

16 oz Beer

2 tbsp Yellow Mustard

4 qts White Cheddar, shredded

4 cans Evaporated Milk

2 qts Heavy Cream

2 tsp Salt

1/2 c Franks hot sauce

1/4 c Corn Starch

Directions:

  1. In a large saucepan over medium heat, add beer and reduce by 75%. Then add evaporated milk and heavy cream and slowly bring to a simmer.

  2. In a large bowl, toss shredded cheese with corn starch.

  3. Add cheese mixture 1 quart at a time to the saucepan with the hot cream mixture. After each addition, whisk until fully melted, and continue adding and slowly melting until all cheese has been added.

  4. Whisk in salt, hot sauce & yellow mustard.

  5. Simmer for 30 minutes, stirring often, being sure to scrape the bottom of the pot to avoid scorching

  6. Remove from heat, and cool quickly in an ice bath.

  7. Reheat gently, being sure not to boil, so it does not split.
